As we come across things we think are interesting we will post them here. Send us stuff you think is interesting and we'll post it for you.
No Grind Bean Coffee
My brother calls it Camp Coffee, but what ever the name, it is the best tasting coffee ! ! Anyone, except Stuart who has tried it agrees, however, we are amazed of those who profess to be coffee connoisseurs, have not tried whole bean coffee, yet say it won't work. We think they probably have an interest in some coffee pot company.
For those of you who use a thermos, you do not have to grind or make coffee in a coffee maker. Simply put one tablespoon of whole coffee beans per cup of coffee into a thermos and add boiling Seven Creeks spring water and let set for about an hour. I use arrabica beans From 8 O'clock (for those who roast their own coffee, I use green coffee beens from www.burmancoffee.com, see links, an importer passionate about great tasting coffee beans. The coffee will be a lighter color than if you made it with a coffee maker, however, it tastes heartier, has a very good aroma, and is not bitter. You can leave it in the thermos as long as you want without it becoming bitter and can even make it the night before. My dad makes it this way. I always liked my coffee with milk and sugar, but since brewing it this way I now drink it black. One word of caution, the water is much darker and has a bitter taste if you try to do this with city water which has chlorine. One wor of caution, if you use a sealed thermos, leave the lid loose for about the first 15 minutes to prevent pressure from building up. Tom
Recent coffee taste test results: A person made bean coffee using reverse osmosis treated water and told us it did not taste good. We recently did a taste test of coffee made with distilled and reverse osmosis water with no minerals added and compared it to coffee made with our spring water. The coffee made with RO and distilled water had a bitter taste, like it does when made with tap water with chlorine, so to be certain of good tasting bean coffee we recommend you always use natural water.
I recently had a person from a coffee web site, coffeegeek.com, whose members take their coffee very seriously, try the whole bean coffee. It did not work for him, and I think it was because he used a light roast of coffee (he only roasts his own). So if you try whole beans use regular or dark roast.
Friendly Bean Soup
If you would like your bean soup a little more friendly after it has been eaten, try soaking it in spring water before you cook it. The spring water dissolves the unfriendly chemical in the beans which is difficult for some people to digest. Soak one pound of beans in at least 1 quart of real spring water for at least 12 hours overnight changing the water at least once. The amount of friendliness varies per individual.
Keeping water in the refrigerator
We suggest water in the refrigerator be kept in closed containers like gallon jugs. Leaving the water in dispensers with pour spouts which need to be left open to vent also allows any food odors in the refrigerator to affect the water taste.
Pasta
One customer uses our spring water for making pasta. To save water , however, they cooked the pasta with just enough water and did not rinse it off. They claim it even tastes better cooking it that way. We tried it and we think it tastes better than cooking and rinsing. We boiled 8 ounces of pasta in about one quart of water with 2 tablespoons of olive oil. We did not add any salt. We Let the pasta boil until it is tender, then shut off the heat and let it set for about 10 more minutes to allow the remaining water to be absorbed. It took us a couple of times to get the amount of water right. One thing, you have to keep the lid on the pasta until you use it or it will stick together
No Tears Onions
One customer uses our spring water for making strong onions mild. They cut the onions very thin and soak them in spring water completely covered for about two hours at room temperature, then drain them in a collander for about an hour until there are dry. This time of the year it is diffcult to get mild onions so we tried it and it worked.
